Moringa Egg Drop Soup Recipe

Moringa egg drop soup is a healthy part of any meal plan. Light in taste, low in calories as well as excellent for your digestive system. To prepare this soup you need the following ingredients:

  • Bunch of fresh moringa leaves
  • ½ bunch of green onions
  • 1 big or 2 small carrot
  • 2 celery sticks
  • 8 – 10 Shitake mushrooms (fresh or dried)
  • 5 – 6 tablespoons of soy sauce
  • Chicken or vegetable bouillon cube
  • 2 liters of water
  • 1 – 2 eggs

To prepare Moringa egg drop soup, bring the water to a boil, add bouillon cube to dissolve. Add sliced green onion, sliced celery sticks, carrots sliced ​​in to thin rings. and washed and sliced Shitake mushrooms. 

If you’re using dried Shitake mushrooms leave them in warm water to stand for about 20 minutes, and then cut them in slices. Add both mushrooms and water to the saucepan.

Now cover the saucepan and cook over medium low temperature for about 15 minutes. After that, add Moringa leaves and soy sauce and cook for two minutes.

In the meantime, beat the eggs well and add them slowly in a thin steam to the cooked Moringa egg drop soup, stirring constantly.

Let everything cook for another 3 – 4 minutes.

If Moringa egg drop soup is not seasoned enough, you can add salt or more soy sauce. If you use vegetable bouillon cube, soup becomes a nice vegetarian meal.
