Moringa Leaf Sauce Recipe

This recipe is based on traditional Senegalese peanut sauce that contains Moringa leaf powder.

Moringa Leaf Sauce - Moringa Facts
  • 5 tablespoons of Moringa leaf powder
  • 1 pound of smoke or dried meat (fish, chicken or other meat)
  • ¼ cup of peanut batter
  • 5 tablespoons of cooking oil (any type)
  • 1 medium onion – chopped
  • 1 quart of water
  • Salt and pepper to taste
  • Red pepper or pepper flakes are optional

To prepare this Moringa leaf sauce, mix peanut butter and water together and bring them to a boil.

After it boils, add meat of your choice and cook for 20 minutes over medium heat. For this sauce you can choose any type of meat that satisfies your taste, it just has to be dried, or dried and smoked.

Now add oil and chopped onions and continue to simmer over medium heat for an additional 20 minutes. Season to taste with salt and pepper, and add some chopped red pepper, or red pepper flakes if you want to.

This Moringa leaf sauce works best if served over cooked rice or couscous. But you can also use it with rice noodles, spaghetti, and cooked potato. The combinations are endless. Use your imagination and enjoy.
