Stir-Fried Shrimps With Moringa Leaves Recipe

This healthy Asian inspired recipe combines sea life and vegetables to create a delicious meal. By pairing Moringa Leaves with fresh shrimp and vegetables, this meal is sure to become an instant favorite.

  • 1 Head of Bok-choy
  • 1 lb (450 g) Shrimps
  • 2 tbsp (30 ml) Sherry
  • 3 tbsp (45 ml) Soy sauce
  • 2 tbsp Fresh ginger
  • 1/4 tbsp (1 ml) Chili paste
  • 4 Green onions
  • 3 Garlic cloves
  • 3 tbsp (30 ml) Peanut oil
  • 15 Shiitake mushrooms
  • 2 Red bell peppers

Peel and devein shrimp and place them in a large bowl.

Add sherry, finely chopped ginger, soy sauce, chopped garlic and onions. Toss well and marinate for 30 minutes.

Heat 2 tbsp of peanut oil in a wok. Drain shrimps, while preserving the marinade.

Add shrimp to the wok and stir-fry for 2 minutes. Remove shrimps from wok and set aside.

Bring water to boil and add Moringa leaves. Cook leaves for 2 minutes and drain water.

Cut Moringa leaves into smaller pieces and let them dry.

Add remaining oil to wok. Add shiitake mushrooms and cook for 2 minutes.

Add cooked Moringa leaves, chopped bok-choy and red pepper. Cook for additional 5 minutes.

Take remaining marinade and stir chili paste into it. Pour this mixture into wok and simmer for 2 minutes.

Add shrimps mix well and simmer 2 more minutes.

Serve with steamed rice.
