Moringa Soup Ingredients:
- Olive oil
- 1 tbs of garlic
- 1 small onion
- 1 tomato
- Chicken breasts
- Salt
- 2 cups Chicken broth
- 4 Shiitake mushrooms
- 1 Papaya
- 3 fresh springs of Moringa leaves
- Bunch of Indian spinach
- 1 tbs of chopped fresh ginger
- 4 tbs Fish sauce or soy sauce with 1 tbs of lemon juice
Heat up olive oil and add garlic. Fry for a few seconds and add sliced onion. Mix and fry for a while. Then add tomato and chicken breasts and salt. Simmer down for two minutes. Add two cups of chicken broth, cover and boil for 2 to 3 minutes.
Cut Shiitake mushrooms into slices and put them in the boiling soup. Peel and slice papaya and add it after mushrooms. Let it boil for a few minutes and add ginger and fish sauce.In the end add spinach and Moringa leaves. Cook for 2 to 3 minutes and serve.
